Components

  • 400 grams rooster breast fillets, minimize into strips
  • 1 tsp additional virgin olive oil
  • 1 cloves garlic, crushed
  • 1 tsp smoked paprika
  • 1 tsp floor cumin
  • 1 tsp floor coriander
  • 1/8 tsp cayenne pepper
  • 250 grams microwavable brown rice
  • 200 grams tinned black beans, drained
  • 1 crimson onion, sliced
  • 1 crimson capsicum, sliced
  • 8 small corn tortilla
  • 4 tbsp reduced-fat Greek pure yoghurt
  • 1 bunch recent coriander, chopped
  • 1 lime, minimize into wedges

Technique:

  • Preheat oven to 220c, put together a big baking dish and line a baking tray with baking paper.
  • In a bowl coat the rooster with oil, garlic and spices.
  • Within the massive baking dish lay out the precooked rice, beans, crimson onion and capsicum.
