To check the freshness of caviar, the best way to check it is to sniff it. A fresh caviar has almost no odor, but spoiled caviar has a strong fishy odor. When you still have concerns about the freshness of caviar, try flooding it with water: while fresh caviar should sink to the bottom, expired or sour caviar will float to the top.
